INTRODUCTION

Papain is a cysteine hydrolase that is stable and active under a wide range of conditions. It is very stable even at elevated temperatures. The latex of Carica papaya is a rich source of papain. Papain is a type of plant protease which is isolated from the papaya fruit through purification process of latex. It has strong protease activity and has decomposing ability of protein. Papain is widely used in various food and non food applications.

  • Appearance :Creamish white powder/Yellow brown liquid 
  • Odor :Typical papain odor 
  • pH Range :4.8-6.2

  • Papain Powder :60 TU/mg to 1000 TU/mg 3600 USPU/mg to 60000 USPU/mg
  • Papain Liquid :60 TU/mg to 200 TU/mg
